Coconut Nectar Lime Bar

Ingredients
For the Crust:
1 cups of Bali Nutra Coconut Butter
1/4 cup Coconut Sugar Or Coconut Nectar
6 tablespoons Coconut Oil.

For the Lime Filling:
3 egg yolks (at room temperature)
1 (Cup/300g) sweetened condensed milk.
1/2 cup lime juice
1/4 teaspoon salt
1 lime (zested)
Garnish: lime slices

Steps to Make It
Gather the ingredients.

Pre-heat the oven to 350 F.

  1. Add the Roasted Coconut Butter to the Coconut sugar and Coconut Oil
  2.  Press the Coconut Butter mixture into the bottom of an 8″ x 8″ square baking pan.
    Note that a glass pan works very well for this recipe : )
  3. Bake for 10 -12 minutes and allow to cool slightly, while leaving the oven on.
  4. For the lime filling: Add the egg yolks to the mixing bowl and, using a stand or hand mixer, whisk for a few minutes until a little fluffy.
  5. Mix in the sweetened condensed milk, lime juice, salt, and lime zest.
  6. Pour the mixture into the Bali Nutra Coconut Butter crust and return to the oven for 10 to 12 minutes, or until set and ready.
  7. Cool to room temperature and then refrigerate for 3- 4 hours & slice into bars and serve with a wedge of lime on top, to get the mouth water!

Coconut Flour Keto Pancakes

Coconut Keto Pancakes

Bali Nutra Coconut Pancakes, suitable for Keto diet

Ingredients:

1/2 Cup Coconut Flour
1/2 Tspn Baking Soda
2 Tspn Bali Nutra Organic Coconut Oil
4 x Organic Eggs
1 Tsp Vanilla
1/2 Cinnamom
1/2 Cup Coconut Cream
1/2 Cupt Almond Milk
1/4 Tspn Himalayan Salt
1/2 Cup Bali Nutra Organic Coconut Nectar

Instructions:

1. In a blender, add all ingredients except oil and blend until well incorporated, scraping the sides down as needed.
2. Heat a medium pan over medium heat, then add enough oil to coat the pan. When pan has heated, pour about 1/2 cup of batter onto the pan. Cook batter until golden on one side, then flip and continue cooking until golden on the other side (note: Thicker pancakes will take longer to cook). Set aside and continue cooking until no batter remains
3. Serve coconut flour pancakes hot with Bali Nutra Coconut Nectar and or berries

Raw Chocolate Coconut Biscuit

Elevated Cacao Bali Biscuit

The One and Only Chocolate Biscuit to try whilst in Bali

Ingredients:

Biscuit:
2 cup of desiccated Coconut
1/2 Cup filtered Water
20g Maca Powder
1 tsp Vanilla Powder
5 drops Medicine Flower Extract
1 tbsp Lemon Juice
1 Pinch Bali SeaSalt
35g Bali Nutra Coconut Milk Powder

Filling & Decor:

  • 10 Tbsp Bali Nutra Roasted Coconut Butter
  • 200g Elevated Cocoa (Cocao & Pink Salt)
  • 25g Desiccated Coconut

Instructions

1. Put all biscuit ingredients in a bowl and combine well using your hands. Squeeze the mixture to fully combine.

2. Use a dampened, offset spatula to prevent stickiness, spread mixture to a Teflex sheet-lined, dehydrator tray. Aim for an even thickness. Note: I spread mine to 20cm x 20cm. A square shape enables easy scoring.

3. Score the mixture into the size you would like. Suggest 5cm x 5cm square but you can choose whatever shape you like.

4. Dehydrate at 42-45 degrees C (108F) for 8-10 hours.

5. Flip onto the mesh and dehydrate for another 10 – 15 hours, or until crisp & crunchy.

Allow biscuits to cool for 10 – 15 minutes.

6. Spread 1 Tbsp of Bali Nutra: Roasted Coconut Butter between two biscuits and squeeze together to form a sandwich. Repeat until all biscuits are made.

7. Melt chocolate over a double boiler until it reaches 42 degrees C. Temper chocolate for shine, snap and shelf-stability. Click here for simple tempering guidelines.

8. Enrobe your biscuits in chocolate and place on a tray with parchment paper. The chocolate should be around 27-29 degrees C for enrobing. Note: When you place the biscuits on the parchment paper, you should not have any runny chocolate. If you do, the chocolate needs to be cooler. Stir chocolate until the temperature drops and thickens a little more.

9. After enrobing each biscuit, immediately decorate with desiccated coconut.

Place biscuits in the fridge for 10-15 mins or until set.

Once set, place in an air-tight container and consume within 1-2 weeks. Enjoy!

The Clever Cook & Peanut Butter Girl make…… Coconut Snow Balls with Bali Nutra

Two good friends of Bali Nutra are the super fantastic foodies The Clever Cook and Peanut Butter Girl (Tiffany Brien). Between them both they create and cook some incredible dishes often featuring lashings of our very own Bali Nutra coconut syrup.

Tiffany was crowned Miss Northern Ireland in 2012 and is now an established model, foodie and fitness fanatic. Both The Clever Cook and Peanut Butter Girl are big fans of Bali Nutra coconut syrup and we make regular appearances in their recipes. They are happy for us to share one of these such recipes with you today, their delicious recipe for Coconut Snow Balls – a wow for any apres dinner party treat, or gift, or just a guilt-free sofa snack!

 

Coconut Snow Balls

(makes 7)

Ingredients

8 Pitted Dates

2 Heaped Tbsp of Cacao Powder

2 Tbsp of Bali Nutra Coconut Syrup

1 Tsp of Vanilla Extract

80g of Roasted Hazelnuts

30g of Unsweetened Desiccated Coconut

 

Preheat your oven to 180c, this is for roasting your hazelnuts. Place dates and cacao powder in food processor and pulse for 30 seconds. Make sure that the dates are well blended, it should result in a sticky mass. This usually moves to one side of the food processor when done. Then add the Bali Nutra coconut syrup and vanilla extract. If using vanilla essence use two teaspoons instead of one. Re-blitz this concoction in the food processor. Meanwhile put your hazelnuts in the oven to roast for 10 minutes. Once these have cooled, rub together with the palm of your hands to allow the skins to fall off. Place hazelnuts with rest of mixture to re-blend in food processor. This will take up to 4 minutes, allow stirring time in between. The nuts should be fully broken down and mix well with other ingredients.

Roll the mixture into 8 balls, roll these on a plate with shredded coconut to coat. Place in fridge and allow to set for 15-20 minutes.

Little Raw Cheesecakes with Coconut Syrup!

If you are looking to find a vegan, raw, lactose-free dessert recipe that is truly delicious, look no further! These little raw cheesecakes taste amazing, look adorable and are packed full of good stuff. Not only are they rich in protein from the use of almonds and cashews, but they substitute sugar for our incredible Bali Nutra Coconut syrup. Additionally, we use coconut oil instead of butters or other oils.

This dessert is perfect for dinner parties, celebrations or just as a guilt-free treat!
Serves 12. Preparation time : 1.5 hours.

Ingredients:
Base:
10 pitted medjool dates.
150g blanched almonds.
Topping:
200g cashews (soaked in boiling water for an hour before drained.)
Juice from ½ a lemon.
4x tablespoons of melted coconut oil.
250ml greek or vanilla yoghurt/ Vanilla Co Yo yoghurt.
Fruit:
2x plums.
3x tablespoons of Bali Nutra Coconut Syrup.
1x cinnamon stick.
1x star anise.
1x teaspoon of mixed spices.

How you do it:
Blend the dates into a sticky ball. Add the almonds into the blender until finely chopped and the mixture sticks together.
Grease a muffin tin and add greaseproof paper to each tin (leaving 2 cm each side to help you lift them out!)
Put the mixture in each muffin tin, pressing firmly onto the greaseproof paper until well compacted. Then leave to freeze while you work on the topping.
Chuck all the topping ingredients into the blender until it becomes creamy. Spoon this onto your bases, leveling the tops. Cover it all in clingfilm and then refrigerate for an hour (or until they are set.)
Slice the plums and carefully poach in the syrup and spices over a low heat for 5 to 8 minutes. Then take of the heat and leave the plums to steep in the spiced syrup as it cools.
Take the cheesecakes out of the muffin tins, pop a couple of the plums on top, add a healthy drizzle of coconut syrup and serve!

Can coconut syrup really be the healthy sugar substitute we have all been waiting for?

As a holistic nutritional practitioner, I spend much of my time helping people of all ages to find a way to improve their diets. This does not mean completely cutting out all those tasty morsels that everyone likes to indulge in, once in a while, but simply finding a balance in what you have on your plate. When Mario from Bali Nutra asked me to review their coconut syrup, a refined sugar substitute, I jumped at the chance – and I have to say that I was not disappointed with what I discovered.

I have plenty of first-hand experience of working with people who have become victims of high sugar diets. Many of us are unwittingly ingesting far too much processed sugar, even in what we consider to be healthy foods, and it is this regular overloading of refined sugar that can cause significant health problems over time. This is one of the reasons why, I am so keen to investigate healthier substitutes that people can use to replace refined sugar in their diets.

Coconut Syrup Claims – Reviewed
I’ve explored many alternative sweeteners over the years, so I approached Bali Nutra Coconut Syrup as I have learned to approach all the others – with a healthy air of scepticism.

These are the syrup’s professed benefits:
• 100% organic and natural with no preservatives or artificial sweeteners.
• Environmentally friendly production credentials.
• Ideal for diabetics as it’s a low Glycaemic product.
• More nutritious than other sweeteners.
• Rich in antioxidants.
• Packed full of health promoting vitamins and minerals.

Bali Nutra claim that their product is gluten free, GMO free and fat free. Now this is a long list of supposed positives. But, I have done my research and I have to say that I have not found anything in my investigation that conflicts with their claims.

Firstly it is entirely natural, made with a raw antioxidant, free from preservatives and potentially harmful GM processes. Bali Nutra Coconut Syrup is produced on small family-owned farms in Bali where pesticides are not used and the palm trees are responsibly tapped for their sweet sap. I am told that this practice has been going on for generations on the island. As no chemicals or pesticides are used on the trees, and the sap collection does not harm them, it has got to be one of the most environmentally friendly cottage industry sugar production methods I’ve ever seen. The collected sap is heated to prepare it for bottling and, well, that’s it! One super-sweet healthy alternative to refined sugar – from tree to table in fewer steps than any other sweetener I know.

Enough of the online research, and one-to-one interviewing, and onto my area of expertise – let’s dive into the details of what makes Bali Nutra coconut syrup such a nourishing, healthy, tasty choice.

Super Sweet but Easy on your Blood Sugar Levels
I was particularly intrigued by Bali Nutra’s claims that their product could be enjoyed by those with diabetes. Now, everyone knows that those with diabetes need to carefully control their diets to manage their condition. One part of this is to consider the glycaemic index of different foods. Low GI diets can be a suitable option for diabetics, as this type of meal plan can help to keep blood sugar levels more stable than eating lots of high GI foods. Essentially, this low GI diet helps remove the peaks and troughs that refined sugars create.

One major benefit of Bali Nutra coconut syrup is that it has a low glycaemic index (GI) of ± 35. When compared with the rating of brown sugar (64), white sugar (60) and even honey (58-83) you can see the significant difference between these popular sweeteners and coconut syrup. In fact a medium sized orange, a large carrot or a small box of raisins all have a higher GI than coconut syrup.

It’s my opinion, therefore, that coconut syrup could potentially form part of a low GI diet, when regulated properly against other foods and factors.

Cutting down on sugar, is not merely something which people with health issues should be thinking about. Indeed, eating foods which are lower in sugar can help to prevent a whole host of health problems associated with refined sugars. These include tooth decay, high blood pressure, obesity (something of a growing problem here in the UK and across the globe) and the development of diabetes in the first place. Some have gone further and suggested that refined sugar is, in effect, toxic to our systems.

Full of Vitamins and Minerals
Bali Nutra coconut syrup is also packed full of important vitamins and minerals. The liquid is a rich source of potassium, which helps maintain healthy blood pressure levels. It contains high levels of magnesium, which promotes healthy bones, and also zinc and vitamin C which boost the immune system. Bali Nutra coconut syrup is also a fantastic source of iron which aids the development of new red blood cells. The syrup also includes Vitamin B1, B2, B3, B6. These each have individual, as well as collective, health benefits including supporting healthy digestion and encouraging healthy blood flow and oxygen levels. These high vitamin concentrations promote healthy skin, bones, eyes and teeth as well as maintaining strong muscle movement and a healthy nervous system.

My Opinion
I think you’ve probably already guessed which way I’m leaning on this one. It’s pure, it’s healthier on your body, it’s kinder on the environment and it tastes glorious, so I know that I for one will be adding it to my weekly shop.

Vegan Nutty Chocolate Squares Recipe from BigCityDreamer made with Coconut Syrup

This wonderful recipe was created by the super talented BigCityDreamer aka @fresheather ! It’s a definite to try out yourself in the kitchen and is a great example of what delicious goodies you can make with a few splashes of our delicious coconut syrup!

Base Layer:
3/4 cup ground pecan nuts (or 3/4 cup coconut flour – although it is a bit too dry with this)
2 tbsp cacao (or cocoa)
3 – 4 tbsp Bali Nutra coconut syrup
1 tbsp coconut oil, melted (I use Coconut Merchant)

Combine all ingredients until they clump together (you can do this by hand). Press into a small lined square baking tray – the smaller the tray, the thicker the layers!

Middle Layer:
1/2 cup crunchy PB (or almond butter… or hazelnut butter… any nut butter)!
3 tbsp Bali Nutra coconut syrup
1 tbsp coconut oil, melted

Mix PB, syrup and oil until combined. Spread on top of base layer. Put in the fridge or freezer while you’re making the next layer.

Topping:
1/4 cup cacao powder (I use Bioglan)
1/4 cup coconut oil, melted
3 tbsp Bali Nutra coconut syrup

Mix the cacao, melted coconut oil and coconut syrup together until you have a smooth, melted chocolate consitency (have to admit, I ate quite a bit of this part before it made it into the baking tray)! Pour on top of the middle layer and spread evenly with a spatula (bang the base of the tray on the worktop a few times to make the top smooth and even).

Set in the fridge for 30 mins and you’re good to go! It tastes amazing after the chocolate has just set and the rest is still melty! Cut into squares and store in the fridge!

Boost Protein Very Berry Smoothie

Ingredients

1 banana
Handful of blueberries, strawberries, blackberries

1 tblsp Bali Nutra coconut syrup
1 tsp protein powder (as per required)
1 cup spring water

 

Method

1. Blend to desired consistency and enjoy.

TIPS: It helps if you add the water at the start of the blend and more towards the end to match consistency as preferred.
Step 1. Pour half a cup of Spring water in a pint sized glass.
Step 2. Mix in protein powder in same pint sized glass.
Step 3. Add Chopped Banana
Step 4. Add All Berries
Step 5. Add Bali Nutra Coconut Syrup
Step 6. Pour into Blender and Mix It Up!
Step 7. Turn Blender off and taste and add more water or Coconut Syrup to your own taste.
